  • 2 pieces ripe bananas Use ripe, spotty bananas for best flavor.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
  • In a mixing bowl, mash the ripe bananas with a fork until smooth.
  • Stir the melted butter into the mashed bananas.
  • Mix in the baking soda and salt.
  • Stir in the sugar, beaten egg, and vanilla extract.
  • Finally, mix in the flour until just incorporated.
  • Pour the batter into the prepared loaf pan.

Baking

  • Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Easy Banana Bread is perfect on its own, but you can also enjoy it with butter, jam, or cream cheese. Store in an airtight container at room temperature for 3-4 days, or freeze for up to 3 months. Use ripe bananas for the best flavor and don't overmix to maintain a light loaf.
