  • 3 ripe bananas 3 ripe bananas, mashed Use overripe bananas for maximum sweetness.
  • 1.5 cups 1 ½ cups all-purpose flour Whole wheat flour can be used for added fiber.
  • 0.75 cups ¾ cup sugar (brown or white) Honey or maple syrup can be used as alternatives.
  • 2 large 2 large eggs Flax eggs can be used for a vegan alternative.
  • 1 teaspoon 1 teaspoon baking soda Baking powder can replace if needed.
  • 0.5 teaspoon ½ teaspoon salt Optional: can be omitted.
  • 1 teaspoon 1 teaspoon vanilla extract Almond extract can be used for a different flavor.
  • 0.5 cups ½ cup butter or oil, melted Coconut oil or applesauce can be used for a lighter option.
  • 0.5 cups ½ cup optional add-ins (chopped nuts or chocolate chips) Dried fruit or seeds can also be added.

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  • In a large mixing bowl, mash the overripe bananas until nearly smooth.
  • Add sugar and melted butter (or oil) into the bowl and mix until well combined.
  • Stir in the eggs and vanilla extract, mixing until everything is incorporated.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Be careful not to overmix.
  • If you’re adding nuts or chocolate chips, fold them in now.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  • Let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a fun twist, try adding spices like cinnamon or cardamom, or even a tablespoon of coffee for a deeper flavor. Be sure to use ripe bananas for optimum sweetness and moisture.
