  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2 large eggs, beaten (or ½ cup unsweetened applesauce for a vegan option)
  • 1 teaspoon vanilla extract (a must-have for that comforting flavor)

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x5-inch loaf pan with butter or line it with parchment paper.
  • In a large bowl, mash the ripe bananas with a fork or potato masher until smooth.
  • Incorporate melted butter, brown sugar, eggs, and vanilla into the bananas, stirring until combined.
  • In another bowl, whisk together flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, stirring gently.
  • If using, fold in your choice of nuts, chocolate chips, or dried fruits.
  • Pour the batter into the prepared pan and smooth the top.

Baking

  • Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack.
  • Allow the bread to cool completely before slicing.

Notes

Experiment with baking times based on your oven. The more speckles on the bananas, the sweeter they will be. Avoid overmixing to keep the bread light and airy.
