  • 5 pieces Persian cucumbers
  • 0.5 tsp salt
  • 0.5 tbsp sesame oil
  • 0.75 tbsp light soy sauce
  • 0.5-1 tbsp sugar adjust based on taste
  • 0.75 tbsp rice vinegar
  • 1 tbsp chili oil
  • 0.5 tbsp sesame seeds
  • 0.5 tbsp garlic (minced, optional) add for stronger flavor

Preparation

  • Rinse and slice one end of the cucumber at an angle. Continue slicing at an angle for oval slices to your preferred thickness.
  • Add the sliced cucumbers to a bowl or container and sprinkle with 1/2 tsp of salt. Mix well and refrigerate for at least 20 minutes to draw out the water.
  • After 20 minutes, drain any excess water and give the cucumbers a quick 10-second rinse before returning them to the bowl/container.
  • Add sesame oil, light soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and optional minced garlic to the cucumbers.
  • Stir until all ingredients are well combined, then serve. Enjoy!

Notes

This salad stores well in an airtight container in the fridge for up to a week but is best enjoyed within 2-3 days. Not ideal for freezing.
