Preparation

  • Season the chicken breasts generously on both sides with salt and pepper.
  • In a medium bowl, whisk together the chicken broth, heavy cream, grated Parmesan cheese, minced garlic, dried oregano, dried thyme, and optional red pepper flakes until well combined.

Cooking

  • Place the seasoned chicken breasts in the crockpot.
  • Pour the prepared sauce evenly over the chicken.
  • Sprinkle the chopped sun-dried tomatoes over the top.
  • Cover and cook on LOW for 4 hours or HIGH for 2 hours.
  • About 30 minutes before cooking time ends, add the butter to the crockpot and gently stir it into the sauce.

Serving

  • Garnish with freshly chopped basil or parsley and serve hot.
  • This dish is great with rice, pasta, or crusty bread to soak up the sauce.

Notes

For extra flavor, marinate the chicken for a few hours before cooking. You can modify the recipe by using protein like chicken thighs, shrimp, or tofu. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat as needed.
