  • 4 pieces boneless skinless chicken breasts
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese Use freshly grated for better flavor.
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes Optional for heat.
  • ½ cup chopped sun-dried tomatoes In oil, drained.
  • 2 tbsp butter Add during the last 30 minutes of cooking.
  • Fresh basil or parsley, for garnish

Instructions
 

Preparation

  • Season the chicken breasts with salt and pepper on both sides.
  • In a bowl, whisk together the chicken broth, heavy cream, Parmesan cheese, garlic, oregano, thyme, and red pepper flakes.

Cooking

  • Place the seasoned chicken in the crockpot and pour the sauce over the top.
  • Sprinkle sun-dried tomatoes over the chicken.
  • Cook on LOW for 4 hours or HIGH for 2 hours, until the chicken is tender and cooked through.
  • Add butter during the last 30 minutes of cooking and stir to combine.

Serving

  • Garnish with fresh basil or parsley before serving. Serve with rice, pasta, or bread.

Notes

Store leftovers in an airtight container in the refrigerator for about 3-4 days, or freeze for later use. For richer sauce, use fresh Parmesan cheese.
