  • 1 lb macaroni Use elbow macaroni or any preferred pasta.
  • 2 cups diced cucumber Cucumbers add a refreshing crunch.
  • 1 cup diced green pepper Provides sweetness and crunch.
  • 2 tablespoons grated onion For added flavor.
  • 1/2 cup sweet pickle relish Gives a touch of sweetness.
  • 2 hard-boiled eggs chopped Adds protein and richness.
  • 1 cup mayonnaise For creaminess.
  • 1 cup sour cream Adds tanginess.
  • 1/4 cup milk To thin the dressing.
  • Kosher salt and freshly ground black pepper To taste.

Preparation

  • In a large pot of salted boiling water, cook the macaroni until al dente. Drain and rinse with cold water. Place in a large bowl.
  • Add cucumber, green pepper, relish, and onion to the macaroni. Mix well and set aside.
  • In a small bowl, combine mayonnaise, sour cream, milk, salt, and pepper. Stir until well mixed.
  • Pour the dressing over the macaroni mixture. Stir to combine. Add chopped eggs and gently fold them in.
  • Cover the salad and refrigerate until ready to serve, preferably overnight to allow flavors to meld.

Notes
