Ingredients
  

Dry Ingredients

  • 4 cups flour
  • 4 tablespoons sugar
  • 1.5 teaspoons salt
  • 3 teaspoons baking powder

Wet Ingredients

  • 1 cup milk Can substitute with almond, oat, or other types of milk
  • 1 teaspoon vanilla
  • 2 tablespoons butter or oil Use for greasing the pan
  • 1 cup pancake mix Made from the dry ingredients above

Instructions
 

Preparation

  • In a large bowl, add the egg, milk, vanilla, and butter. Mix well until the ingredients are combined.
  • Add 1 cup of homemade pancake mix to the bowl and stir everything together until the batter is smooth.

Cooking

  • Preheat a pan on low-medium heat and brush with oil or butter.
  • Pour in 1/4 cup of batter for each pancake and cook until golden brown on each side.
  • Serve warm and enjoy your fluffy pancakes!

Notes

To store the pancake mix, keep it in an airtight container in the fridge for up to a week or freeze portions in zip-lock bags. Reheat cooked pancakes in a toaster or microwave. Experiment with flavors by adding cinnamon or zesting lemon/orange, or even incorporating chopped herbs for a savory twist.
