  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup butter, softened Ensure butter is softened for easy mixing.
  • 2 whole eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips or nuts (optional) Can substitute with dried fruits or spices.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine the flour, baking powder, and salt; gradually stir into the creamed mixture until just blended.
  5. Fold in chocolate chips or nuts if using.
Baking
  1. Drop by teaspoonfuls onto ungreased cookie sheets.
  2. Bake for 10 to 12 minutes in the preheated oven, or until edges are golden.
  3. Allow to cool on wire racks.

Notes

Store in an airtight container in the fridge for up to one week. Freeze cookies in a freezer-safe bag for later use.
