  • 4 eggs 4 eggs
  • 1 cup 1 cup bean sprouts
  • 1/2 cup 1/2 cup chopped green onions
  • 1/2 cup 1/2 cup diced ham or shrimp (optional) Can be omitted for a vegetarian version.
  • 1/4 cup 1/4 cup soy sauce For serving.
  • 1 tablespoon 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Oil for frying

Instructions
 

Preparation

  • In a bowl, beat the eggs and add bean sprouts, green onions, and diced ham or shrimp (if using). Season with salt and pepper.
  • Heat oil in a frying pan over medium heat.
  • Pour a ladle of the egg mixture into the pan and cook until the edges are set. Flip and cook the other side until golden brown.
  • Repeat with the remaining mixture.

Serving

  • Serve hot with soy sauce drizzled on top.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a frying pan or microwave. For longer storage, freeze for up to a month, separating layers with parchment paper.
