Ingredients
  

Egg Foo Young Batter

  • 7 large eggs Fresh eggs for the batter.
  • 1 Tbsp soy sauce Adds umami flavor.
  • 1 tsp garlic powder
  • 1/4 tsp black pepper
  • 2 cups bean sprouts Fresh or pre-packaged.
  • 1/2 cup diced onion or green onions Use green onions for a milder flavor.
  • 1 tsp sesame oil Optional for added flavor.
  • 4 Tbsp oil For frying.

Proteins (optional)

  • 1 cup shrimp For Shrimp Egg Foo Young.
  • 1 cup shredded chicken For Chicken Egg Foo Young.

Instructions
 

Preparation

  • In a large bowl, add eggs, soy sauce, garlic powder, black pepper, and sesame oil. Mix well.
  • Add bean sprouts and onions to the egg mixture. Mix until combined.

Cooking

  • In a large frying pan, add 4 tablespoons of oil. Using a 1/3 cup, scoop the mixture and fry in the pan over medium heat until golden brown on each side.
  • Repeat the process until all the mixture is used.

Gravy Preparation

  • In a pan, add butter and let it melt, then sauté the garlic.
  • Add cornstarch to make a roux and whisk until golden brown.
  • Add chicken stock, soy sauce, oyster sauce, and the rest of the ingredients. Let it boil, then continue whisking until the sauce thickens.
  • Remove from heat.

Notes

Delicious Egg Foo Young pairs well with steamed jasmine rice, stir-fried vegetables, and can be refrigerated for up to three days. Reheat in a non-stick skillet over low heat for best results. Freezing is also an option; make sure to reheat thoroughly.
