Preparation
- Preheat your oven to 375°F (190°C).
- In a large sauté pan, heat olive oil over medium heat.
- Add chopped onions and cook until soft.
- Add curry powder and cook for another minute, stirring to release the spices’ fragrance.
Assembling the Pie
- Lightly grease your baking dish with olive oil or butter.
- Layer filo sheets in the baking dish, brushing each sheet with melted butter or olive oil.
- After about 6 layers, spoon the prepared curry mixture onto the filo.
- Continue layering with more filo sheets, brushing each one with butter or oil.
Baking
- Place the pie in the oven and bake for 30-40 minutes, or until the filo is golden and crisp.
- Once baked, remove the pie from the oven and allow it to cool slightly before slicing.
- Slice and serve warm, with a side of yogurt or a fresh salad for a complete meal.
Notes
Serve Curried Filo Pie with a dollop of cool yogurt or a refreshing cucumber salad. It pairs well with mango chutney or mixed greens drizzled with vinaigrette. Leftovers can be stored in the refrigerator for up to 3 days.
