Ingredients
  

Filo Pastry and Filling
  • 12 sheets filo pastry
  • 2 tablespoons curry powder
  • 2 medium onions, finely chopped
  • 4 cups fresh spinach, chopped
  • 1 cup peas
  • 2 medium potatoes, peeled and diced
  • 2 tablespoons olive oil for cooking and brushing

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large sauté pan, heat olive oil over medium heat.
  3. Add chopped onions and cook until soft.
  4. Add curry powder and cook for another minute, stirring to release the spices’ fragrance.
Assembling the Pie
  1. Lightly grease your baking dish with olive oil or butter.
  2. Layer filo sheets in the baking dish, brushing each sheet with melted butter or olive oil.
  3. After about 6 layers, spoon the prepared curry mixture onto the filo.
  4. Continue layering with more filo sheets, brushing each one with butter or oil.
Baking
  1. Place the pie in the oven and bake for 30-40 minutes, or until the filo is golden and crisp.
  2. Once baked, remove the pie from the oven and allow it to cool slightly before slicing.
  3. Slice and serve warm, with a side of yogurt or a fresh salad for a complete meal.

Notes

Serve Curried Filo Pie with a dollop of cool yogurt or a refreshing cucumber salad. It pairs well with mango chutney or mixed greens drizzled with vinaigrette. Leftovers can be stored in the refrigerator for up to 3 days.
