Curried Filo Pie

Ingredients
  

Filing Ingredients
  • 2 medium Onions, finely chopped
  • 4 cups Fresh spinach, chopped
  • 1 cup Peas
  • 2 medium Potatoes, peeled and diced
  • 2 tablespoons Curry powder
  • 2 tablespoons Olive oil For sautéing and greasing
Pastry Ingredients
  • 12 sheets Filo pastry Use high-quality filo pastry and thaw completely before use.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large sauté pan, heat olive oil over medium heat.
  3. Add chopped onions and cook until soft.
  4. Add curry powder and cook for another minute, stirring to release the spices’ fragrance.
Assembling the Pie
  1. Lightly grease your baking dish with olive oil or butter.
  2. Layer filo sheets in the baking dish, brushing each sheet with melted butter or olive oil.
  3. After about 6 layers, spoon the prepared curry mixture onto the filo.
  4. Continue layering with more filo sheets, brushing each one with butter or oil.
Baking
  1. Place the pie in the oven and bake for 30-40 minutes, or until the filo is golden and crisp.
  2. Once baked, remove the pie from the oven and allow it to cool slightly before slicing.
Serving
  1. Slice and serve warm, with a side of yogurt or a fresh salad.

Notes

For a spicy twist, add chopped fresh chili or red pepper flakes to the filling. To add a hint of citrus, incorporate some lemon zest into the vegetables before baking. Allow the pie to sit for a few minutes after baking for easier slicing. Keep unused filo covered with a damp cloth to prevent drying.
