  • 1.5 lbs ground beef
  • 1 packet dry French onion soup mix
  • 0.5 cup breadcrumbs
  • 2 large eggs
  • 0.25 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 cup shredded Swiss cheese Plus extra slices for topping
  • 1 tablespoon chopped fresh parsley Optional garnish

Preparation

  • In a large bowl, combine the ground beef, French onion soup mix, breadcrumbs, eggs, milk, Worcestershire sauce, and shredded Swiss cheese. Mix until just combined—be careful not to overwork the mixture.
  • Shape the mixture into a loaf and place it in a greased slow cooker.

Cooking

  • Cover the crockpot and cook on low for 6–7 hours or on high for 3–4 hours. The meatloaf is done when the internal temperature reaches 160°F (71°C).
  • In the last 10–15 minutes of cooking, top the meatloaf with slices of Swiss cheese. Cover the crockpot and let the cheese melt.

Serving

  • Carefully remove the meatloaf from the slow cooker, slice it up, and garnish with chopped parsley if desired. Serve it warm and enjoy!

Notes

For extra flavor, you can add sautéed onions or garlic to the mixture. To reduce cook time, shape smaller individual meatloafs instead of one large loaf. Experiment with different types of cheese for variety. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
