  • 8 oz salsa Choose mild or spicy salsa based on your preference.
  • 1 cup frozen corn You can add other vegetables like bell peppers or onions for extra flavor.
  • 1 can black beans Make sure to drain and rinse to reduce sodium.
  • 1 packet taco seasoning Check the label to ensure it's gluten-free.

Instructions
 

Slow Cooker

  • Place the chicken in the crockpot.
  • Add cream cheese, salsa, frozen corn, black beans (drained and rinsed), and taco seasoning.
  • Stir everything well to combine.
  • Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
  • Once done, shred the chicken with two forks and mix everything together before serving.

Instant Pot

  • Place the chicken at the bottom of the Instant Pot.
  • Add cream cheese, salsa, frozen corn, black beans (drained and rinsed), and taco seasoning on top.
  • Close the lid and set the valve to sealing.
  • Cook on high pressure for 10 minutes.
  • Once the cooking time is up, do a quick release.
  • Shred the chicken and mix everything together before serving.

Notes

Crockpot Fiesta Chicken can be served over rice, in tacos, or with tortilla chips. Enhance the flavor with your favorite toppings like shredded cheese, sour cream, diced avocado, or chopped cilantro. Leftovers can be refrigerated for up to 3-4 days or frozen for up to 3 months.
