Preparation
- In a skillet, cook the ground beef and onions (if using) over medium heat until browned. Drain excess fat.
- In a mixing bowl, combine cream of mushroom soup and milk.
- In the crockpot, layer half of the potatoes, followed by half of the ground beef mixture, and half of the cheese. Repeat the layers.
- Pour the soup mixture over the top and season with salt and pepper.
Cooking
- Cover and cook on low for 6-8 hours or until the potatoes are tender.
Notes
This casserole can be paired with a fresh green salad, garlic bread, or steamed vegetables. For a spicy kick, use pepper jack cheese or add diced jalapeƱos.
