  • 2 lbs pork shoulder or pork stew meat, cut into chunks You can substitute with chicken if preferred.
  • 2 cans (25 oz each) hominy, drained and rinsed
  • 1 medium onion, diced
Spices and Broth
  • to taste cumin, chili powder, or oregano Feel free to adjust spices based on preference.
  • enough to cover ingredients broth or water

Method
 

Preparation
  1. In your Crock-Pot, combine the chunks of pork with the drained and rinsed hominy.
  2. Add the diced onion and your choice of spices.
  3. Pour in enough broth or water to cover all the ingredients.
Cooking
  1. Set the Crock-Pot to low and cook for about 8 hours, or until the pork is tender and flavorful.
  2. Serve hot and enjoy the heartwarming flavors!

Notes

For added flavor, consider browning the pork in a skillet before adding it to the Crock-Pot. Let the dish rest after cooking for enhanced flavors. Posole can be topped with fresh cilantro, diced avocados, or lime, and is great with warm corn tortillas or rice.
