  • 2 pieces boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • Salt and pepper to taste
  • Tortilla chips, for serving
  • Shredded cheese, for topping
  • Chopped cilantro, for garnish
  • Sour cream, for serving (optional)

Method
 

Preparation
  1. Place the chicken breasts in the crock pot.
  2. Add the black beans, corn, diced tomatoes, onion, garlic, cumin, chili powder, and chicken broth.
  3. Season with salt and pepper to taste.
Cooking
  1. Cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through.
  2. Before serving, shred the chicken in the soup using two forks.
  3. Serve the soup hot topped with tortilla chips, cheese, cilantro, and sour cream.

Notes

For added heat, consider adding diced jalapeños or a splash of your favorite hot sauce. If you prefer a creamier soup, stir in a bit of cream cheese or sour cream before serving. For a deeper flavor, brown the chicken and sauté the onion and garlic before adding them to the crock pot.
