Preparation
- Place the chicken breasts in the bottom of the crock pot.
- Add the carrots, potatoes, and onion on top of the chicken.
- In a bowl, mix the chicken broth, garlic powder, thyme, salt, and pepper.
- Pour the broth mixture over the chicken and vegetables.
- Cover and cook on low for 6-8 hours or high for 4-5 hours.
- Shred the chicken before serving and mix it well with the vegetables and broth.
Notes
Serve with a side of crusty bread or a fresh green salad. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
