Main Ingredients
  • 4 pieces chicken breasts Boneless and skinless recommended
  • 4 pieces carrots, chopped
  • 4 pieces potatoes, diced
  • 1 piece onion, chopped Sauté for added flavor if desired
  • 2 cups chicken broth
Seasonings
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Salt and pepper to taste

Method
 

Preparation
  1. Place the chicken breasts in the bottom of the crock pot.
  2. Add the carrots, potatoes, and onion on top of the chicken.
  3. In a bowl, mix the chicken broth, garlic powder, thyme, salt, and pepper.
  4. Pour the broth mixture over the chicken and vegetables.
  5. Cover and cook on low for 6-8 hours or high for 4-5 hours.
  6. Shred the chicken before serving and mix it well with the vegetables and broth.

Notes

Serve with a side of crusty bread or a fresh green salad. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
