  • 2 pounds boneless, skinless chicken breasts or thighs
  • 2 cans cream of chicken soup (10.5 ounces each)
  • 1 can cream of celery soup (10.5 ounces)
  • 12 ounces frozen mixed vegetables

Preparation

  • Place the chicken in the crock pot.
  • Add the cream of chicken soup and cream of celery soup on top of the chicken.
  • Stir in the frozen mixed vegetables.
  • Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the chicken is cooked through and vegetables are heated.
  • Shred the chicken inside the crock pot before serving.
  • Serve hot, optionally with biscuit or pastry on top.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. For freezing, allow to cool completely and store in freezer-safe containers for up to three months. Reheat as needed.
