  • 2 medium zucchinis, grated Make sure to squeeze out moisture after grating.
  • 1 teaspoon salt Used to draw out moisture from zucchinis.
  • 1 cup flour
  • 1/2 cup grated Parmesan cheese Can be substituted with feta for a tangy twist.
  • 1/4 cup chopped fresh parsley Can use different herbs for variation.
  • 2 large eggs
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • Oil for frying Use enough oil to cover the bottom of the skillet.

Preparation

  • Grate the zucchinis and sprinkle with salt. Let them sit for 10 minutes to draw out moisture, then squeeze excess water out.
  • In a bowl, combine the grated zucchini, flour, Parmesan cheese, parsley, eggs, black pepper, and garlic powder. Mix until well combined.

Cooking

  • Heat oil in a skillet over medium heat.
  • Drop spoonfuls of the mixture into the skillet and flatten slightly.
  • Cook until golden brown, about 3-4 minutes on each side.
  • Remove from skillet and drain on paper towels. Serve hot.

Notes

Store leftover fritters in an airtight container in the refrigerator for 2-3 days. Reheat in a skillet or oven to restore crispiness.
