Ingredients
  

For the Tostada Towers

  • 1 lb Chicken breast or thighs Can substitute with tofu for a vegetarian option
  • 1/4 cup Honey
  • 1/4 cup Fresh lime juice
  • 2 tbsp Olive oil
  • 1 clove Garlic Fresh or powdered
  • 8 pieces Corn tortillas Can also use whole wheat or gluten-free
  • 1 cup Shredded lettuce Optional topping
  • 1 cup Diced tomatoes Optional topping
  • 1/2 cup Crumbled cheese (like cotija) Optional topping
  • 1/4 cup Fresh cilantro Optional topping

For the Avocado Lime Drizzle

  • 2 ripe Avocados
  • 1/4 cup Lime juice
  • 1 clove Garlic (optional)
  • 1/4 cup Water To adjust consistency
  • to taste Salt and pepper

Instructions
 

Preparation

  • In a bowl, whisk together honey, lime juice, olive oil, minced garlic, and salt.
  • Add chicken, ensuring it’s coated evenly. Marinate for at least 30 minutes.

Cooking the Chicken

  • Heat a skillet over medium-high heat. Add a drizzle of olive oil.
  • Once hot, add the marinated chicken. Cook for about 6-7 minutes per side, until fully cooked. Let it rest before slicing.

Preparing the Tostadas

  • For crispy tostadas, heat oil in a pan and lightly fry each tortilla until golden brown.
  • Alternatively, brush tortillas with olive oil and bake at 400°F (200°C) for about 10 minutes.

Making the Avocado Lime Drizzle

  • In a blender, mix avocados, lime juice, water, and garlic. Blend until smooth.
  • Adjust consistency with more water if needed and season with salt and pepper.

Assembling the Towers

  • Start by placing a tostada on a plate.
  • Layer with sliced chicken, your choice of toppings, and drizzle generously with the avocado lime sauce.
  • Continue stacking, alternating layers until you reach your desired height.
  • Finish with a sprinkle of fresh herbs or additional lime juice for presentation.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. It's advisable to keep the components separate to maintain crispiness.
