Ingredients
  

Flatbread Base

  • 1 package thin flatbreads or store-bought naan
  • 2 tablespoons olive oil For brushing on flatbreads

Toppings

  • 8 ounces brie cheese, sliced
  • 1 cup dried cranberries or fresh, if in season
  • 1/2 cup walnuts, roughly chopped
  • 2 tablespoons honey preferably locally sourced
  • 1 teaspoon red pepper flakes optional, for a spicy kick
  • fresh rosemary or thyme for garnish
  • sea salt and black pepper to taste

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Arrange the flatbreads in a single layer on a baking sheet. Drizzle olive oil over the tops and brush evenly.

Topping

  • Add sliced brie cheese evenly across each flatbread.
  • Scatter dried cranberries on top of the cheese.
  • Sprinkle with chopped walnuts.
  • Season with sea salt, black pepper, and red pepper flakes if desired.

Baking

  • Bake in the preheated oven for 10-12 minutes until the flatbreads are crispy and the cheese is melted.

Hot Honey Drizzle

  • While baking, warm honey on the stove until it starts to bubble. Mix in red pepper flakes for a spicy version.

Serving

  • Drizzle hot honey over the baked flatbreads, garnish with fresh herbs, and serve immediately.

Notes

For extra flavor, infuse the honey with herbs beforehand. Pair with wines like Sauvignon Blanc or a fresh arugula salad for best results.
