  • 1 piece Flatbread or pizza dough Store-bought thin flatbread is recommended for speed.
  • 8 ounces Brie cheese Soft-ripened, creamy, and melty; rind can be left on.
  • 2 each Bosc or Anjou pears Sliced thinly.
  • 1/2 cup Cranberry sauce Or whole cranberries lightly sweetened.
  • 1/4 cup Toasted almonds Sliced or slivered for crunch.
  • 1 tablespoon Olive oil Brushed on the flatbread for crisping.
  • 1 tablespoon Honey or maple syrup To drizzle on top.
  • 1 teaspoon Fresh thyme or rosemary Optional for added flavor.
  • to taste Sea salt and black pepper For seasoning.

Method
 

Preparation
  1. Preheat your oven to 425°F with a rack in the middle.
  2. Prep your flatbread by rolling out raw pizza dough thin on parchment or placing already baked flatbread on the parchment.
  3. Lightly brush the surface with olive oil.
  4. Slice the brie into thin slabs or small pieces.
Assembly and Baking
  1. Layer the brie pieces evenly on the flatbread.
  2. Lay the pear slices over the brie in slightly overlapping layers.
  3. Add small spoonfuls of cranberry sauce over the pears and sprinkle with toasted almonds.
  4. Bake for 10 to 14 minutes until golden and bubbling.
  5. Finish with a drizzle of honey or maple syrup and optional herbs.
  6. Rest for 2 minutes before slicing.

Notes

For make-ahead options, toast almonds and prepare pears up to 2 hours in advance. Store prepared pears in the fridge covered. Avoid excess sauce to prevent sogginess.
