Preparation
- Preheat your oven to 425°F with a rack in the middle.
- Prep your flatbread by rolling out raw pizza dough thin on parchment or placing already baked flatbread on the parchment.
- Lightly brush the surface with olive oil.
- Slice the brie into thin slabs or small pieces.
Assembly and Baking
- Layer the brie pieces evenly on the flatbread.
- Lay the pear slices over the brie in slightly overlapping layers.
- Add small spoonfuls of cranberry sauce over the pears and sprinkle with toasted almonds.
- Bake for 10 to 14 minutes until golden and bubbling.
- Finish with a drizzle of honey or maple syrup and optional herbs.
- Rest for 2 minutes before slicing.
Notes
For make-ahead options, toast almonds and prepare pears up to 2 hours in advance. Store prepared pears in the fridge covered. Avoid excess sauce to prevent sogginess.
