Preparation

  • Preheat the oven to 425°F (220°C).
  • Wash and scrub the potatoes thoroughly. Cut into bite-sized cubes, leaving the skins on.
  • In a large bowl, toss the potatoes with olive oil until well coated. Add garlic powder, onion powder, salt, and pepper to taste. Include herbs if desired.
  • Stir in the freshly grated parmesan cheese until all pieces are coated.
  • Line a baking sheet with parchment paper and spread the potatoes in a single layer.

Cooking

  • Bake in the preheated oven for 25 to 30 minutes, flipping halfway through for even crispiness.
  • Remove from the oven when golden and crunchy, and garnish with additional herbs or cheese if desired.

Notes

Ensure potatoes are dry after washing for maximum crispiness. Avoid overcrowding the baking sheet. Experiment with different seasonings.
