Ingredients
  

For the Fritters
  • 2 cups fresh corn kernels (or frozen, thawed)
  • 1 cup shredded sharp cheddar or mozzarella cheese
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 large eggs
  • 1/4 cup finely chopped green onions

Method
 

Preparation
  1. In a large bowl, combine fresh corn, cheese, flour, baking powder, eggs, and green onions. Mix until well combined.
Cooking
  1. Heat oil in a frying pan over medium heat.
  2. Drop spoonfuls of the mixture into the hot oil, flattening them slightly.
  3. Fry until golden brown on both sides, about 3-4 minutes per side.
  4. Remove from the pan and drain on paper towels.
  5. Serve warm and enjoy!

Notes

These fritters are delicious on their own or served with a side of tangy dipping sauce like ranch or spicy aioli. Store leftovers in an airtight container in the refrigerator for up to three days. To reheat, pop them in the oven at 350°F until heated through. You can also freeze uncooked fritters for up to a month and fry them straight from the freezer.
