Crispy Bacon Double-Stack Swiss Mushroom Meatloaf

Ingredients
  

Meatloaf Base
  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1/2 cup breadcrumbs Can substitute with gluten-free breadcrumbs.
  • 1/4 cup milk
  • 1 ea egg
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
Layers
  • 6 slices Swiss cheese
  • 6 slices bacon Cook until crispy.
  • 1 cup sliced mushrooms Sauté until softened.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef, ground pork, breadcrumbs, milk, egg, salt, pepper, garlic powder, onion powder, and paprika. Mix until everything is well incorporated.
  3. Divide the meat mixture in half. Press one half into the bottom of a loaf pan.
  4. Layer the Swiss cheese slices over the meat mixture, covering the area completely.
  5. In a skillet over medium heat, cook the bacon until crispy, and then drain on paper towels. Place the crispy bacon slices on top of the cheese.
  6. Sauté the sliced mushrooms in the same skillet until softened, then layer them on top of the bacon.
  7. Press the remaining half of the meat mixture on top of the mushrooms to create the top layer.
Cooking
  1. Bake in the preheated oven for 45-50 minutes, or until the meatloaf is cooked through (the internal temperature should reach 160°F).
  2. Let the meatloaf rest for about 5 minutes before slicing and serving.

Notes

For extra flavor, add fresh herbs like thyme or parsley to the meat mixture. Customize with preferred cheeses or vegetables. Store leftovers tightly wrapped in plastic or in an airtight container for up to 3 days in the refrigerator or freeze for about 3 months.
