  • 1 small onion, chopped
  • 4 cups potatoes, peeled and sliced really thin
  • 1 pound kielbasa or smoked sausage, cut into rounds
  • 1.5 cups shredded cheddar cheese, divided split into two portions
  • 1 can (10.5 ounces) cream of mushroom or cream of chicken soup
  • 3/4 cup sour cream
  • black pepper to taste
  • salt to taste
  • chopped parsley for garnish (optional)

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 baking pan.
  • In a large bowl, mix together the cream of mushroom soup, sour cream, and half of the cheddar cheese. Taste and season with salt and black pepper as desired.
  • Add the sausage, potato slices, and onion to the bowl. Toss until all pieces are well coated.
  • Transfer the mixture to the prepared baking pan and spread it evenly.
  • Cover the dish with foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 10-15 minutes until bubbly, golden, and the potatoes are soft.
  • Sprinkle the remaining cheddar cheese on top and let it cool for 5 minutes before garnishing with parsley, if desired.

Notes

For a richer flavor, add minced garlic or your favorite herbs. This dish can be prepared ahead of time and stored in the refrigerator or freezer.
