  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil

For the Sauce

  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped (optional) For garnish

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper.

Cooking

  • Spread the potatoes on a baking sheet in a single layer and roast for 20-25 minutes, or until tender.
  • In a saucepan, over medium heat, sauté minced garlic in a bit of olive oil until fragrant.
  • Stir in the heavy cream and bring it to a simmer.
  • Add the grated Parmesan cheese and stir until melted and smooth.
  • Once the potatoes are cooked, transfer them to a serving dish and pour the creamy garlic sauce over them.
  • Garnish with chopped fresh parsley if desired. Serve warm.
