Preparation

  • Preheat oven to 400°F (200°C).
  • In a bowl, toss the halved baby potatoes with olive oil, garlic, salt, and pepper.

Cooking

  • Spread the potatoes on a baking sheet and roast for 20-25 minutes until tender.
  • In a saucepan, heat heavy cream over medium heat. Stir in Parmesan cheese until melted and smooth.
  • Once potatoes are done, pour creamy garlic sauce over them and toss to coat.
  • Garnish with parsley if desired. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator. They will remain fresh for up to three days. Reheat in a microwave or skillet over low heat. Freezing may affect sauce texture. For variations, add minced jalapeños, fresh herbs, or lemon juice.
