Ingredients
  

Buckeye Layer

  • 1 cup unsalted butter Melted
  • 1.5 cups creamy peanut butter
  • 2 teaspoons pure vanilla extract
  • 3.5 cups powdered sugar, sifted

Chocolate Layer

  • 1.75 cups milk chocolate chips Melted
  • 1.5 tablespoons salted sweet cream butter, softened
  • 2/3 cup sweetened condensed milk Melted

Mint Chocolate Layer

  • 1.5 cups white chocolate chips Melted
  • 14 ounces sweetened condensed milk
  • 1 teaspoon mint extract
  • Green food coloring To taste

Cookie Dough Layer

  • 1 cup all-purpose flour
  • 2 cups semi-sweet chocolate chips, divided For folding into dough and for topping
  • 1/4 cup granulated sugar
  • 1/3 cup light brown sugar, packed
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions
 

Preparation

  • For the Buckeye layer, melt the butter and peanut butter together in a saucepan over low heat. Remove from heat and stir in vanilla. Gradually add powdered sugar and mix until smooth. Spread this layer into a greased pan.
  • For the chocolate layer, melt chocolate chips, butter, and sweetened condensed milk together in a saucepan until smooth. Pour over the Buckeye layer and refrigerate until firm.
  • For the Mint Chocolate layer, melt white chocolate and mix in sweetened condensed milk, mint extract, and green food coloring. Pour over a layer of melted chocolate. Chill until set.
  • For the Cookie Dough layer, cream butter and sugars together, then add flour, milk, and vanilla to make a dough. Fold in chocolate chips. Spread on top of the Mint Chocolate layer and refrigerate until firm.
  • Slice into squares and enjoy!

Notes

Store in an airtight container in the refrigerator for up to a week. Can also be frozen for up to three months. Use high-quality chocolate chips for a richer flavor experience. Allow layers to cool completely in the refrigerator before adding the next to avoid mixing. Experiment with various extracts for diverse flavors, such as almond or coconut.
