Preparation
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Season chicken with Cajun seasoning and sear until golden, then remove.
- In the same skillet, sauté onion, bell pepper, and garlic until softened.
- Stir rice into the skillet to coat with aromatics.
- Add chicken broth, bring to a simmer, then reduce heat. Cover and cook for 15–18 minutes until rice is tender.
- Return chicken to skillet and simmer until heated through.
- Stir in heavy cream and Parmesan.
- Adjust seasoning with salt and pepper.
- Garnish with parsley or green onions and serve hot.
Notes
