  • 8 oz cream cheese, softened Make sure to soften the cream cheese before mixing.
  • 1/2 cup vegetable oil Can be substituted with canola oil or melted butter.
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Add the vegetable oil, sugar, eggs, and vanilla extract to the cream cheese and beat until well combined.
  • In a separate bowl, whisk together the flour and baking powder.
  • Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
  • Pour the batter into the prepared cake pan and smooth the top.

Baking

  • Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.

Notes

Store the Cream Cheese Cake in an airtight container. It can be kept at room temperature for up to two days, in the refrigerator for about a week, or frozen for up to three months. You can serve it plain or with a dusting of powdered sugar, fresh fruits, whipped cream, or your favorite frosting. Avoid overmixing the batter for a lighter cake, and consider adding chocolate chips or nuts for extra flavor.
