For the cookie dough
  • 1/2 cup unsalted butter, softened Ensure butter is at room temperature.
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh or dried cranberries, chopped Chop fresh cranberries for better distribution.
  • 1 tablespoon orange zest
  • 1/2 cup white chocolate chips Consider substituting with dark or milk chocolate.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Gently fold in the chopped cranberries, orange zest, and white chocolate chips.
  7. Scoop spoonfuls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 10-12 minutes, or until the edges are just starting to turn golden brown.
  2. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to one week. For longer storage, freeze in a single layer on a baking sheet and transfer to a freezer-safe container for up to three months.
