Ingredients
  

Pizza Base

  • 1 whole pre-made pizza dough (about 10-12 in / 25-30 cm) Can be store-bought or homemade.
  • 1 tbsp olive oil For brushing the dough.

Toppings

  • 1 cup cooked chicken, shredded Provides lean protein.
  • 3 oz brie cheese, sliced Creamy cheese that melts well.
  • 1/4 cup cranberry sauce or whole cranberry compote For a touch of natural sweetness.
  • 1/2 cup shredded mozzarella cheese For added creaminess.
  • 1 tsp fresh thyme leaves Enhances flavor.
  • to taste arugula (optional) For topping.

Instructions
 

Preparation

  • Preheat oven to 425°F (220°C).
  • Roll out pizza dough on a lightly floured surface and transfer it to a parchment-lined baking sheet or pizza stone.
  • Brush the dough with olive oil.

Assembly

  • Spread shredded chicken evenly over the base.
  • Add slices of brie and scatter mozzarella on top.
  • Spoon small dollops of cranberry sauce over the cheese and sprinkle with fresh thyme.

Cooking

  • Bake for 12–15 minutes, or until the crust is golden and the cheese is bubbly and melted.
  • Remove from oven, top with fresh arugula if desired, slice, and serve immediately.

Notes

For an impressive meal, serve alongside a mixed greens salad drizzled with balsamic vinaigrette. Leftovers can be stored in the fridge for up to three days. For longer storage, pizza can be frozen for up to three months.
