Dough and Base

  • 1 lb pizza dough You can buy store-bought dough or make your own.

Toppings

  • 2 cups cooked chicken, shredded Use leftover or rotisserie chicken.
  • 8 oz Brie cheese, sliced The star of the show! Softened, creamy, and rich.
  • 1 cup cranberries, fresh or dried Fresh cranberries are ideal, but dried works well if out of season.
  • 1 small red onion, thinly sliced For a zesty crunch.
  • 1 tablespoon olive oil For drizzling.
  • 1 tablespoon fresh herbs (thyme and rosemary), chopped Add lovely earthiness.
  • Salt and pepper To taste.

Preparation

  • Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.
  • On a floured surface, roll out the pizza dough to your desired thickness. Transfer it to a baking sheet or pizza stone.
  • If you wish to add a base sauce, consider a light layer of olive oil or a balsamic glaze for extra flavor.

Assembly

  • Evenly distribute the shredded chicken over the dough, followed by the sliced Brie.
  • Sprinkle cranberries and red onions on top, adding the fresh herbs last.
  • Drizzle with olive oil and season with salt and pepper.

Baking

  • Bake in the preheated oven for about 12-15 minutes or until the crust is golden-brown and the Brie is melted and bubbly.

Serving

  • Let the pizza cool for a couple of minutes before slicing. Serve with a light side salad.

Notes

Rotate the pizza halfway through cooking to ensure even baking. For a crispier crust, pre-bake the dough for about 5 minutes before adding toppings.
