Ingredients
  

Pizza Base

  • 1 ball pizza dough (store-bought or homemade)
  • 1 tbsp olive oil

Toppings

  • 1 cup caramelized onions (from about 2 medium onions)
  • 1/2 cup whole berry cranberry sauce
  • 6 oz brie cheese, sliced or torn into chunks
  • 1/4 cup chopped walnuts (optional) optional for added crunch
  • Fresh rosemary or thyme, for garnish
  • Salt and pepper, to taste

Preparation

  • Preheat your oven to 475°F (245°C). If you are using a pizza stone, make sure to preheat it as well.
  • Roll out the pizza dough on a floured surface to form a 10–12 inch circle.
  • Transfer the dough onto a parchment-lined baking sheet or a preheated pizza stone.
  • Brush the dough with olive oil to keep it moist.
  • Spread the caramelized onions evenly over the dough.

Topping the Pizza

  • Dollop the cranberry sauce in various spots on top of the onions.
  • Distribute the brie pieces evenly across the pizza.
  • Sprinkle the walnuts on top if using.
  • Season lightly with salt and pepper to taste.

Baking

  • Bake for 10–12 minutes, or until the crust is golden and the cheese is bubbly.
  • Garnish with fresh rosemary or thyme before serving.

Notes

Serve this pizza hot straight out of the oven for the best flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place slices in an oven until warm, which will help maintain the crispy crust. You can use store-bought caramelized onions to save time.
