Ingredients
  

For the crust
  • 1 1/4 cups all-purpose flour
  • 1/3 cup powdered sugar
  • 1/2 cup unsalted butter (cold, cubed) Make sure the butter is very cold for a flaky crust.
  • 1 large egg yolk
  • 1-2 tbsp ice water
For the filling
  • 1 cup ricotta cheese
  • 2 tbsp honey
  • 1 tsp orange zest Can use lemon zest for a different flavor.
  • 1 cup sweet-tart cranberries Fresh or frozen cranberries can be used.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the flour and powdered sugar. Add the cold butter and mix until crumbly.
  3. Stir in the egg yolk and ice water until the dough comes together.
  4. Press the dough into a tart pan and prick the base with a fork.
  5. Bake for 15-20 minutes or until lightly golden.
Filling
  1. In another bowl, mix ricotta cheese, honey, and orange zest.
  2. Pour the ricotta mixture into the cooled tart shell.
  3. Top with sweet-tart cranberries and bake for an additional 15-20 minutes.
  4. Allow to cool before serving.

Notes

To serve, consider adding a dollop of whipped cream or a scoop of vanilla ice cream. A drizzle of extra honey adds a delightful touch. Store leftovers covered in the refrigerator for up to three days or freeze individual slices for up to a month.
