Ingredients
  

For the beef mixture

  • 1 lb Ground beef Cook until browned.
  • 1 can Rotel Diced tomatoes with green chilies.
  • 1 can Pinto beans Drain before using.
  • 1 cup Corn Drain before using.
  • 2 tbsp Taco seasoning

For the cornbread

  • 1 box Cornbread mix Use package instructions.
  • 2 large Eggs As per mix instructions.
  • 1/2 cup Milk Add as per mix instructions.
  • 1 cup Cheese Shredded cheese for topping.

Preparation

  • Preheat your oven according to the cornbread mix package instructions.
  • In a skillet, cook the ground beef until browned. Drain excess fat.
  • Stir in Rotel, pinto beans, corn, and taco seasoning; cook for another 5 minutes.
  • In a bowl, mix the cornbread mix with eggs and milk as per the package instructions.

Assembly and Baking

  • In a greased casserole dish, layer the beef mixture and then pour the cornbread batter over the top.
  • Sprinkle cheese on top.
  • Bake for the time recommended on the cornbread mix package or until the cornbread is golden brown and cooked through.
  • Allow to cool slightly before serving.

Notes

Serve warm, pairs well with a side salad or salsa. Add toppings like sour cream or avocado as desired. Store leftovers in an airtight container for up to 3-4 days.
