Ingredients
  

Dry Ingredients

  • 2 cups flour All-purpose flour
  • 1 tbsp cornstarch For added chewiness
  • 1 tsp baking soda Leavening agent
  • 1/2 tsp salt Enhances flavor
  • 1/4 tsp cinnamon For a warm flavor

Wet Ingredients

  • 3/4 cup brown sugar Packed brown sugar
  • 1/4 cup sugar Granulated sugar
  • 1 cup butter Softened
  • 1 large egg Room temperature
  • 1 large egg yolk Adds richness
  • 1 1/2 tsp vanilla extract Pure extract recommended

Mix-Ins

  • 1 cup chocolate chips Use dark or semi-sweet
  • 3/4 cup quick-cooking oats For texture
  • 3/4 cup pecans Chopped
  • 1/2 cup shredded coconut Unsweetened preferred

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, whisk together flour, cornstarch, baking soda, salt, and cinnamon.
  • In another bowl, cream together the brown sugar, sugar, and butter until smooth.
  • Beat in the egg, egg yolk, and vanilla extract.
  • Gradually mix in the dry ingredients.
  • Stir in the chocolate chips, oats, pecans, and coconut.

Baking

  • Drop spoonfuls of dough onto baking sheets.
  • Bake for 10-12 minutes, or until edges are lightly golden.
  • Allow to cool slightly before transferring to a wire rack.

Notes

Serve cookies warm or at room temperature. They pair well with milk or coffee. For a delicious dessert, add a scoop of ice cream on top! Store cookies in an airtight container at room temperature for about a week, or freeze them for up to three months.
