Preparation
- Preheat your oven to 350°F (175°C).
- In a skillet, cook bacon until crispy. Remove and let drain on a paper towel; leave drippings in the skillet.
- Add onion to the drippings and sauté until translucent.
- In a large mixing bowl, combine the baked beans, cooked bacon, onion, barbecue sauce, brown sugar, mustard, black pepper, and salt.
- Pour the mixture into a baking dish.
Baking
- Bake for 30-40 minutes, until heated through.
- If desired, sprinkle cheddar cheese on top during the last 5 minutes of baking.
- Serve warm.
Notes
To store leftovers, cool the Cowboy Baked Beans to room temperature before transferring them to an airtight container. They can be refrigerated for up to four days. Freeze for longer storage, up to three months. Experiment with variations such as adding jalapeños for spice or fresh herbs for flavor.
