For the Cobbler

  • 2 cans sliced peaches in syrup or 4 cups fresh peaches, sliced Use ripe fresh peaches for the best flavor.
  • 1 cup all-purpose flour
  • 1 cup sugar Adjust sweetness to taste.
  • 1 cup milk
  • 1/2 cup unsalted butter, melted Do not skip melting the butter; it creates a lovely crust.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Cinnamon (optional, for sprinkling) Optional but recommended for added flavor.

Preparation

  • Preheat the oven to 350°F (175°C).
  • If using fresh peaches, peel and slice them, then mix with a bit of sugar to release juices (optional).
  • In a large bowl, mix flour, sugar, baking powder, and salt.

Baking

  • Stir in milk and vanilla extract until combined.
  • Pour melted butter into a baking dish, then pour the batter on top without stirring it in.
  • Spoon the peaches (with juices) evenly over the batter.
  • Sprinkle cinnamon on top if desired.
  • Bake for 40-45 minutes until the top is golden brown and a toothpick comes out clean.

Notes

Serve warm with vanilla ice cream or whipped cream. Store leftovers in an airtight container in the refrigerator for 3-4 days. Enjoy cold or warmed up.
