Base Ingredients

  • 1 cup cottage cheese (4% fat recommended)
  • ½ cup shredded pepper jack cheese (or preferred shredded cheese)
  • ½ tbsp taco seasoning See notes for homemade recipe.

Preparation

  • Add the cottage cheese to a food processor or a high-speed blender. Blend on high for 30 seconds to 1 minute until it becomes smooth and creamy. If needed, scrape down the sides with a spatula.
  • Transfer the blended cottage cheese to a microwave-safe bowl. Mix in the shredded cheese and taco seasoning until combined. Alternatively, you can blend all ingredients together instead.
  • Place the cottage cheese mixture in the microwave. Heat it in 15-20 second intervals until warm and melty, usually taking about 1 to 1.5 minutes in total. Be careful not to overheat.
  • Serve warm with your favorite toppings and enjoy with tortilla chips or veggies.

Notes

For an extra kick, add some diced green chilies or salsa. Experiment with different cheeses for your favorite combination. For a smoother texture, blend all the ingredients together.
