  • 1 cup cottage cheese Makes the cookies moist and adds protein.
  • 1 piece egg Acts as a binding agent.
  • ½ tsp vanilla extract Optional, adds flavor.
  • cup granular sweetener Monk fruit sweetener or erythritol.
  • ¾ cup almond flour Gluten-free alternative to regular flour.
  • ¼ cup vanilla protein powder Can substitute with more almond flour.
  • A pinch salt
  • 4 tbsp chocolate chips Optional, can be replaced with nuts or dried fruits.

Preparation

  • Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  • In a blender or food processor, combine cottage cheese with egg and optional vanilla extract. Blend until smooth and creamy.
  • Transfer the blended cottage cheese to a mixing bowl, then add the granular sweetener, almond flour, protein powder, and a pinch of salt.
  • Stir the mixture until the dry ingredients are fully incorporated and the dough is smooth. If the dough is too thick, add a splash of milk; if too sticky, add more almond flour to achieve your desired consistency.
  • Fold in the chocolate chips.
  • Scoop out some dough and shape 9 cookies. Place them on the prepared baking sheet, spacing them apart.

Baking

  • Bake in the preheated oven for 10 to 12 minutes.
  • Allow the cookies to cool on a wire rack before serving.

Notes

These cookies can be stored in an airtight container at room temperature for up to 3 days, in the refrigerator for up to a week, or frozen for up to 3 months. Adjust sweetness as per preference or experiment with different mix-ins.
