  • 1 cup cottage cheese
  • 1 large egg
  • ½ tsp vanilla extract (optional) See notes for variations.
  • cup granular sweetener (monk fruit or erythritol)
  • ¾ cup almond flour
  • ¼ cup vanilla protein powder Or use more almond flour.
  • a pinch salt
  • 4 tbsp chocolate chips

Instructions
 

Preparation

  • Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  • In a blender or food processor, combine cottage cheese with the egg and vanilla extract. Blend until smooth and creamy.
  • Transfer the blended mixture to a mixing bowl. Add the granular sweetener, almond flour, protein powder, and a pinch of salt.
  • Stir until the dry ingredients are fully mixed and the dough is smooth. If the dough is too thick, add a splash of milk; if it’s too sticky, add more almond flour.
  • Fold in the chocolate chips.
  • Scoop the dough and shape it into 9 cookies. Place them on the prepared baking sheet, spacing them apart.

Baking

  • Bake the cookies in the hot oven for 10 to 12 minutes.
  • Let the cookies cool on a wire rack before serving.

Notes

Cottage Cheese Cookies can be served warm or at room temperature. They make a great snack on their own or can be enjoyed with a glass of milk or a cup of tea. For a twist, try spreading a little nut butter on top for extra flavor and nutrition. Store leftovers in an airtight container at room temperature for up to 3 days or in the fridge for about a week. For longer storage, freeze them for up to 3 months.
