Cookie Base Ingredients

  • 1 cup unsalted butter, softened Make sure your butter is softened to room temperature for the best mixing results.
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Add-ins

  • 1 cup semi-sweet chocolate chips Feel free to substitute different types of chocolate chips.
  • 1 cup cornflakes, lightly crushed Adjust the amount for more crunch if desired.

Preparation

  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then mix in the vanilla extract until well combined.

Mixing

  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Gently fold in the chocolate chips and crushed cornflakes until evenly distributed in the cookie dough.

Baking

  • Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store your cookies in an airtight container at room temperature for up to a week. They can be frozen for up to three months. Thaw at room temperature before enjoying.
