Ingredients
  

Main Ingredients

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, softened Make sure it is at room temperature for easy mixing.
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup sour cream Can be substituted with plain Greek yogurt.
  • 0.5 cup fresh lemon juice Fresh juice is recommended for better flavor.
  • 1 tablespoon lemon zest Use fresh for the best flavor.

For the Glaze

  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Preparation

  • Preheat the oven to 350°F (175°C) and grease a loaf pan.
  • In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a separate bowl, cream together the softened butter and granulated sugar until fluffy.
  • Beat in the eggs one at a time, then stir in vanilla extract.
  • Mix in sour cream, lemon juice, and lemon zest until well combined.
  • Gradually add the dry ingredients to the wet ingredients until just combined.
  • Pour the batter into the prepared loaf pan and smooth the top.

Baking

  • Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  • Let it cool in the pan for 10 minutes, then transfer to a wire rack.
  • For the glaze, mix powdered sugar and lemon juice until smooth; drizzle over the loaf once it cools completely.

Notes

Enjoy your lemon loaf simply on its own or with a cup of tea or coffee. It's delicious with whipped cream or fresh berries. Store in an airtight container at room temperature for up to three days, or wrap well and freeze for up to three months.
