Ingredients
  

For the cookie dough

  • 4 ounces cream cheese, softened Make sure it's at room temperature
  • 1/2 cup unsalted butter, softened Make sure it's at room temperature
  • 3/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 10 pieces chocolate sandwich cookies, chopped

Preparation

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, beat cream cheese, butter, and sugar until smooth.
  • Add egg and vanilla, mixing until combined.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Gradually add to wet ingredients, mixing until just combined.
  • Fold in chopped cookies gently with a spatula.
  • Scoop dough into 1.5-inch balls and place on the baking sheet 2 inches apart.

Baking

  • Bake for 10–12 minutes until edges are set and centers look slightly underdone.
  • Cool on the pan for 5 minutes before transferring to a wire rack.

Notes

These cookies can be served on their own or paired with vanilla ice cream. Drizzle with chocolate or caramel for an added touch. Store in an airtight container in the fridge for up to a week, or freeze for later use.
