Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour, spooned and leveled
  • 1/3 cup espresso powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt

Wet Ingredients

  • 3/4 cup salted sweet cream butter, softened Make sure it's at room temperature
  • 2/3 cup dark brown sugar
  • 1/3 cup granulated sugar
  • 1 extra large whole egg, room temperature
  • 1 extra large egg yolk, room temperature
  • 1 1/2 teaspoons pure vanilla extract

Chocolate

  • 12 ounces semi-sweet chocolate chunks
  • 1 cup dark chocolate chips

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, whisk together the flour, espresso powder, baking soda, baking powder, and salt.
  • In another bowl, cream together the softened butter, dark brown sugar, and granulated sugar until light and fluffy.
  • Add the whole egg, egg yolk, and vanilla extract to the butter mixture, mixing until well combined.
  • Gradually mix in the dry ingredients until just combined.
  • Fold in the chocolate chunks and dark chocolate chips.

Baking

  • Drop tablespoon-sized balls of dough onto a lined baking sheet.
  • Bake for 10-12 minutes until the edges are set.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies pair well with coffee or milk. Store in an airtight container for about a week or freeze for up to three months.
