  • 1 cup unsalted butter At room temperature
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 2 tablespoons espresso powder Use high-quality for best flavor
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour Can be substituted with gluten-free flour blend
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips Can substitute with dark or white chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the espresso powder and vanilla extract.
  • In another bowl, combine the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the butter mixture, stirring until just combined.
  • Fold in the chocolate chips.
  • Drop spoonfuls of dough onto ungreased baking sheets, spacing them about 2 inches apart.

Baking

  • Bake for 10-12 minutes or until the edges are golden brown.
  • Allow to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

Store your coffee cookies in an airtight container at room temperature for up to a week. Freeze in a freezer-safe bag for up to three months.
